Braised Beef with Pumpkin

  • 1000 g Angus beef sirloin
  • 500 g of pumpkin already clean
  • 150 ml dry red wine
  • 150 g white onions
  • 100 ml of extra virgin olive oil
  • 450 g vegetable broth
  • 3 sprigs of rosemary
  • Salt
  • Black pepper
  1. Prepare the vegetable broth.
  2. Then clean the pumpkin: peel, remove the kernels and the inner fibers, then slice and then cut into cubes.
  3. Cut the onion into thin slices, fry in a pan together with the oil and the roast beef at a medium high temperature.
  4. Drain with red wine and simmer briefly.
  5. Add chopped rosemary, salt, pepper, pumpkin and the stock.
  6. Bake at 180 ° for two hours.
  7. After the cooking pumpkin cubes mix with the ground until you get a creme and keep a few cubes for the final garnish.
  8. Cut the meat into slices and place on a plate on the pumpkin, garnish with the remaining pumpkin cubes.
