Marinated trout in olive oil

A simple recipe with the 2 most typical products of Lake Garda, trout and extra virgin olive oil.

  • For a trout of about 1 kg:
  • 3 lemons
  • Salt and freshly ground pepper
  • Extra virgin olive oil
  • Croutons and rocket for accompaniment
  1. Fillet the trout and carefully lay the fillets in a tray that does not leave many empty spaces;
  2. Season with salt and freshly ground pepper;
  3. Wet with lemon juice;
  4. Cover the fillets completely with extra virgin olive oil;
  5. Leave to macerate in a cool place for at least 24 hours.
  6. When it is time to serve, cut the fillets into thin slices and accompany with warm bread croutons and rocket.

A fresh, dry white or rosé wine is suitable.
